I imagined it has something to do with sort of training your body to not just let go during sleep...whats the science/psych. of it?

As infants, we lack the muscle control over our anal sphincters and bladder sphincters as well. Accordingly we pee or poop whenever we have to without possibility of control.

As we age, we develop greater muscle tone and control, and toilet training further encourages the development of these muscles.

Eventually a point is reached where the natural state of those muscles is to remain closed until we consciously open them. (Or in cases of accidents, when the volitional control is taken away by spasm or illness, or age and the resulting loss of muscle control.)
