why can't we drink salt water?

'cause it's salty. Duh. :-)

Our cells are composed mainly of water. Cells have a cell membrane that allows certain things to pass from the outside of the cell into the inside, and from the inside to the outside.
When salt water is ingested, it causes the water in our cells to move out past the cell membrane, and mix with the salt water. (The salt draws out the non salty water).
When water leaves the cell, the cell dries out and dies.
Drinking saltwater when thirsty will dehydrate you and can even kill you!
That's why sailors marrooned on rafts without supplies look at the ocean and lament, "water, water everywhere and not a drop to drink."
