OK, so R&F were talking about Hooters tonight. Been there once and the coolest thing was that you can order the wings by the type of part you like. You know how when you order wings and you get the "drumstick" type and the first segment "wing" type? Well you can order just one kind at Hooters. I'm a drum-type man but I have friends who insist that the other kind is better, more meat, juicier, etc. The wings were pretty good, not quite Duff's in Buffalo (or Anchor Bar for that matter), but at least they don't screw with the sauce and they keep it simple with no BS ingredients. I hate it when they screw with the sauce and add Worcestershire sauce, Tabasco, teriyaki sauce, etc. Simple is best!

So what is it, what's the best wing piece?

i like a drumstick better than the wing. now i really have the munchies. i'll take a drumstick or wing right now and it may just be the best one ever.

Definitely the drumstick, with the built in handle. The wing always seems to fall apart...plus you have to use that uncomfortable sucking the meat from between the bones technique.

Unless you like that sort of thing.

We actually made a road trip to have the wings at the "home of the Original Buffalo Wings" (Anchor Bar) in Buffalo. Let me tell you, those are some of the worst wings we ever had. We didn't heed the advice of some locals we met at the Buffalo Bills game who told us not to go there. BUT.. since we made it to Buffalo, we had to have the original, and unfortunately they weren't too good.

Drumstick is easier to eat, less messy, and easier to dip, but the wing has at least twice as much meat. Give me a good mix.

While dining in "polite company" I typically choose the drumstick because it's less messy. But any Buffalo Wings are delish!

anyway, your right though drumsticks are best. But the wingy ones are fun to just suck the meat right off the bone.

I am a fan of the wing. My favorite are from "Chicken and Rib Crib". Ask for them battered and coated in the radiation sauce. Good Times.

For years I was baffled at why did it seem the smaller the buffalo wing the better it tasted. I actually have a legitimate answer and its quite simple. Any Guesses?

I used to think that the "drumstick" portion of the wing was the best. Later on, however, I figured out how to strip the meat from the other portion of the wing in one clean motion, including the hard-to-get meat inbetween the two bones. Dip that bad boy in some bleu cheese dressing and you're golden.

My first guess would be surface area to volume ratio.

I would also surmise that smaller wings come from smaller chickens and therefore the striated muscle on the larger chicken has had more time to develop causing it to be tougher (given the greater development of the skeletal muscle microscopic transverse banding pattern.)

There are two types of muscle fibers, red and white. While most muscles are composed of both red and white fibers, the intensity of the muscle color is due to the proportion of red fibers to white fibers. Muscles which appear red (such as the leg muscles of chicken) have a higher proportion of red fibers than muscles which appear white (such as the breast and wing muscles of chicken). Red muscle fibers also have a higher myoglobin content which gives them their red color. Red muscle forms on parts of the chicken that are used for strength (legs, thigh) = dark meat, but not on the breasts and wings since chickens don't fly (or at least fly a lot)= white meat.

Since ducks fly, duck breasts and wings are dark meat. So the hypothesis that smaller wings have had less time to develop striated muscle seems plausible.

But I still have to go with the surface/volume ratio, and Too Cute agrees.

the only time i'd eat blue cheese dressing is on a wing.

i like a good mix of drums and fligs in my wing basket. they both have their merits.

The best wings I've ever had was at Duff's in Buffalo. ever better than the Anchor Bar!!

Best wings I've ever had were at the Post Office in Lindenhurst (L.I.), but I've found a few places down here on the shore that are "good enough".

I understand your pain, Too Cute. I'm acutally a fan of those wings from the Chinese food places. I'm not a huge fan of REALLY HOT wings. Those are the ones I usually see with no breading. I prefer wings that are at least crispy, but yes, breaded a little. NOT KFC type stuff.

Maybe because of this, I'm not a TRUE Buffalo Wing fan. I don't know. All I know is those wings from Outback Steakhouse are about the BEST ones I've tasted to date.

I have an excellent wing recipe that was stolen from an award winning kitchen. RED HOT is the sauce though there is no substitute and it is the prime ingredient. I love all parts of the wing because it's really just something to put the sauce on. I like 'em well done too.

I'm a drumstick man. I have had drumsticks that have had more meat than any segmented wing. Make 'em nice and hot, with the side of blue cheese and a lil celery and carrots and we're good to go.

I miss 10 cent wing nights... haven't been to one in years.

And the wetnap is for after you lick your fingers clean, for residual stickiness.

Definitely Drumstick. The wings are OK, but they are too bony and the meat is hard to get to without looking lika a T-Rex while you are eating.

I'm with you Moe. The wings that just have skin and no breading are nasty. Those are mass-produced Pizza Hut wings. But the wings you get at a decent restaurant with breading and hot-sauce have the TLC I'm looking for.
