You see, now THAT'S what I was expecting from this post. No more, no less.
But I missed Friday's show, so if they didn't talk about those lamb meat sausages called, and bare with me, Chivolettes, then I'm out of the loop.
Is he talking about the same sausages that Melissa wouldn't give to Ronnie because his name didn't end in a vowel?

Mortadella is basically Italian Bologna, but larger circumference-wise. It does have large chunks of creamy fat (lardo) and usually contains pistachios and peppercorns as well.
For my money, sopressata, a cured Italian sausage made from the pig's head (either hot or sweet) is far better.

is salami made with pork rather then beef
Salami is a fairly generic term for a type of sausage that is uncooked/cured. Salami can be made with beef or pork (or a combo), but the kosher kind (ex. Hebrew National), are of course beef only.
Sopressata is, as I mentioned, made with pork, mostly from the head. It is excellent; go for a good imported sweet brand like Cittero and eat with good Italian bread and some olives. If you like salamis like Genoa, you should love sopressata.
