Ron and Fez are right about this. It's always bugged the hell out of me and I'm glad they talked about it.

I can't stand people who go into Italian delis and ask for "mozzarell" like leaving that A off makes them The Godfather or something.

It's retarded.

Why aren't there any Italians working in any of the pizzarias in Manhattan? Especially downtown the pizza sucks and New york is supposed to be famous for it's pizza.

i saw a program where they said the right pronunciation on these italian words is to also use the vowels on the end...

riccot / no good
riccotta / good
prosciout / no good
proscioutto / good

i have to admit that sometimes i just say "mozz"
"give me a sopressat and mozz with sun dried tomatas"

but since i saw that show i make a point of using the last vowel...

A along with E and O is a strong vowel in italian. It is very rare that the A is not pronounced in Italian, and is with rare exception not pronounced at the end of a word. If you are in a restaurant with the foods described in English, feel free to order in English as well. If you are in a restaurant without English on the menu you should be fine ordering with an English accent, but slaughtering the word is rude.

What Billy was saying was the Southern Italian pronunciation of those words. The Southern Italian and Sicilian dialects sound very different from "proper" Italian (which is based on the Tuscan dialect used by the poet Dante).

For example, a Northerner would pronounce "capicola" as it's spelled. Southerners call it "gah-bah-GOOL". Some other examples: "Pasta Fagioli" becomes "pasta fa-ZOOL", "prosciutto" is "prah-ZJOOT", and "manicotti" is "mah-knee-GAWT".

if they wanted it to sound like pizz-a-ria, why didn't they just leave the "a" in there...

Actually the sicilian dialect is dying out in Italy along with the other regional dialects. Only the older people are still speaking it. But I still pronounce things the old sicilan way like:
ricotta = rigot

I should have clarified earlier my comment on "proper" Italian: I didn't mean to infer that other dialects were "lazy" or "impure" or anything else negative. Perhaps I should have chosen the word "official" instead.

When I was learning Italian in school I was taught that the Tuscan dialect, which Dante used, was considered the "formal/official/proper" version of Italian. It's the equivalent of "The King's English".

Besides, my grandfather's family was from Benevento so they spoke the Neapolitan dialect. Sorry for the confusion.

I'm half Sicilian and AJ is right. The Italian and Sicilian dialects are extremely different.

As for the vowels being left off the end, it's kind of a hybrid New York/Sicilian pronunciation.

Sicilian-Americans speak this way (Mozzarell, Ricott, etc.) but those in Sicily do not.
