Kevin Smith and Co. make hands-down, the most entertaining commentaries. He always has 2-3 stars and then usually a couple View Askew "regulars"...even the commentary for the "Clerks" cartoon series is hilarious.
"Fight Club" has a GREAT commentary. Norton and Pitt and Fincher rock the house.

The Superman DVD has an excellent commentary track with Director - Richard Donner and Uncredited Screenwriter - Tom Mankiewicz.
The M*A*S*H DVD has a rather dull and uninspired commentary track by Robert Altman.

I NEVER listen to commentary tracks. I tried it when I first started buying DVDs, but really think spending another 2 hours just to hear a few insider nuggets really isn't worth it. I'd rather watch a 30 minute "Making of".

Hell yeah.
I am the biggest Back to the Future fan and I was sorely disappointed in the commentaries.

THE GOOD:
BLADE- commentary with Snipes AND all the key crew members all on one track.
LITTLE NICKY- Two seperate tracks. One with Sandler, the writer & the director. Another with a huge list of stars from the movie.
SPINAL TAP- Michael McKean, Chris Guest & Harry Shearer perform the commentary IN CHARACTER!!
THE BAD:
BOOGIE NIGHTS- Director commentary that offers NOTHING!
THE UGLY:
CANNIBAL THE MUSICAL: Trey & Matt get drunker and drunker. Stupid track. No real laughs.
Fez 4 Prez!!

Wait, which "Boogie Nights" disc were you watching? The two deluxe editions have some of the greatest and most creative commentaries and behind the scenes stuff EVER! Fake documentaries and weird ad-libs and interviews with the characters...hilarious stuff...

Godzilla, they have 3 of the SFX people pointing out scenes where they used CGI. Pointless and boring.
View Askew has already been mentioned.
Swingers/Made, nothing really earth shattering, but Favreu and Vaughn are entertaining.
MIB and MIB2, aside from using the telestrater, nothing great.
I hear that for the horrible movie Master of Disguise, the now horrible Dana Carvey does a horrible commentary entirely in the horrible turtle guy character.
