I heard that cinco de mayo is not the celebration of mexican independence, rather it is some mad up holiday that was started about 40 years ago. Is this true?

Cinco de Mayo translates litterally into "The sink filled with mayo." There's an old legend about the origin of the festival, where a nobleman was visiting a poor village and was given a can of tuna fish. He was enraged at this shabby treatment and inedible dry tuna and levied additional taxes on this impoverished village. Before he left however, an old woman came up to him, with a sandwhich in hand. She had moistened the tuna with the mayo in her sink, and the taste delighted the nobleman who repealled all taxes for that year. This left the village plenty of money to go out, get beer and get filthy drunk.

As to how the woman's sink got full of mayo, that's a story for another day.
