The only benefit is that you can get alittle more cash.
If you'd get $8 on the books, you can probalby talk your boss into giving you like $10 off the books.
But you're really cheating yourself in my opinion.
I always get a Tax Refund, but if you don't pay taxes you don't get it. You're not filling your unemployment or Social Security. If you're injured you get no Disability. And those types of jobs never have benefits.
Actually, one good thing I just thought of as I was typing is if you're getting your wages garnished by the government, you can get all the cash due you.

Oh, and another risk you run is that if you leave the job on bad terms, your boss can be an asshole and 1099 you at the end of the year. Then, you will owe all the taxes on the time he reports to Uncle Sam.

It's FAR more advantageous to work on the books than off.
This is due to the entitlement of social security and social security disability benefits, which cover you for life, as soon as you work a certain period of time. The more money you make the greater the benefits, up to statutory maximums.
Social Security is the greatest most helpful social program ever put into effect in this country. It wouldn't be prudent to remove yourself from the system for a short term gain.
Additionally, as an attorney, I've seen MANY people working off the books get caught working by agencies hired to track and film them. I had a case once where a guy swore up and down that he didn't do any work at all b/c his back left him permenantly disabled. My witness was the investigator who showed a film of the guy working on the roof of his house, and best of all, working as a PIANO MOVER! Best of all, this dope wore the exact same outfit as he did in the video, including the T-Shirt with the company logo. LMAO.
Another triumph for truth and justice. (He was prosecuted criminally by the AG's office and convicted of insurance fraud.)
