No Egg Foo Young @ Chinese All-You-Can-Eat Buffets

Egg Foo Young is by far my favorite Chinese delicacy. For some reason or another I can never find it at any Buffet I have ever been at in my entire life.

Keeping it warm doesn't seem to be an issue because you have those breakfast buffets that keep the scrambled eggs warm. The gravy I wouldn't think would be an issue either. The ingredients don't seem too expensive as it is just the eggs, onions, green onions, meat (chicken, pork, beef or shrimp) and various other sprouts and other vegetables thrown in.

Every other Chinese dish I see on the buffet I see except for this. Whats the deal?

You most certainly are NOT seeing "every other chinese dish" at a chinese buffet; you are seeing the most popular ones (you know, the kind of stuff you see at the chinese place in the mall... mostly soupy, un-spiced, americanized versions of Hunan/Szechuan foods... not that there is anything wrong with it - I LOVE bad chinese food, but to my mind it's not real chinese food - it's like the difference between eating a can of Spaghetti O's and going to Coco Pazzo) - I'm guessing that egg foo young is pobably just not popular enough to make the cut along side general tso's chicken, beef and broccoli and pork fried rice.
