Tough to narrow it down to one, so:

TASTIEST: Elliot Easton (The Cars)
MASTER RIFFER: Zakk Wylde
MAESTRO: Prince
MAD SCIENTIST: Frank Zappa
SLOPPIEST, but w/ KILLER VIBE: Jimmy Page
BEST TONE: Ty Tabor (KingsX)
STILL AMAZING: Eddie Van Halen.
HOLY SHIT!: Tuck Andress or Danny Gatton (tie)

These guys consistently blow my mind:

1) EVH (all time greatest, noone has better *feel*)
2) SRV (Early live stuff is amazing, e.g. G*Ray)
3) Steve Vai (plays like a freak, amazing techincal playing)
4) Larry Lalonde (Primus, superb at was he does - playing next to Les)
5) Billy Corgan (use of feedback and raw emotion)

Anders Bjorler (At The Gates/The Haunted)
Wino (Saint Vitus/The Obsessed/Spirit Caravan/The Hidden hand)
Willie Adler (Lamb of God)
James Murphy (Obituary/Death/Disincarnate)
Josh Homme (Kyuss/QOTSA)
Alex Skolnick (Testament)
THE FUCKING CHAMPS!!!!!!!
Rocky George (ST)

Exactly what I thought when he joined Deep Purple years ago; I thought it was a one-off deal; he's still with them.
