Pizza...Chicago or New York style????

I've had both....When I went to service school up at the Great Lakes, a shipmate of mine, who was from Chicago, took me to one of the most popular pizzarias...It was thick...the cheese was under the sauce..it was ok


Now New York pizza is just right....thin, sauce on the bottom...mozzarela right on top...maybe a little black olives on top as a treat!!!!!

What I don't like is chain pizza (no flavor at all)
or the paper-thin Kinchley's, Lido's small ass cripsy crust pizza. I have to eat a whole pie to be satisfied.

Between the two I go New York style, of course. But the best is the (not-so) deep dish that I believe is called Neopolitan. It's a little thicker than NY style, but not Pizza Hut thick. It's made in a pan about a 1/2 inch deep & comes out like cheesy perfection.

The best place I've ever had is a little hole-in-the-wall place in Maplewood called "El Greco's" around the corner from Seton Hall University. Nothing better after a night at Paulie's Landmark Tavern (moment of silence for a dear departed friend) & a 2am El Greco pie. Holy fuck am I getting old.
