By "iTunes music" do you mean the songs you purchase on the iTunes Music Store?

If so, there's two tricks to this... unfortunately neither of which are all that quick.

You can download a program that records directly from your sound card and just record the song as you're playing it back, and then convert that to an MP3.

OR

You can burn the AAC's to a CD in "Audio CD" format. Then just put the CD back into your computer and import the tracks to MP3.

You can always burn them onto CD then use a free utility to rip the songs as MP3. Also, you can use a program like TotalRecorder to recorder the songs as they playt and save the recordings as MP3.

You're probably looking like an easier workaround though.

I don't know shit about PC's, so you'll have to ask someone else about a program for that.

But if you're working on a Mac, I'd recommend WireTap (http://www.download.com/WireTap/3000-2182_4-10213093.html?tag=lst-0-1), which records to uncompressed AIFF,
or Audio Hijack (http://www.download.com/Audio-Hijack/3000-2182_4-10308596.html?tag=lst-0-4), which actually will record straight to MP3, but only the trial version is free.

Edit - Preferences - Importing tab - Import using select mp3.
AAc is better quality and compresses better than mp3.
