Whenever i drink tea i prefer to use honey and some half/half so i usualy buy the larger jar of Golden Blossom honey. It seems that after so many months the honey begins to 'crystalize' for lack of a better word and it loses it's smooth consistency.
I made the mistake of buying the quart bottle of Honey at Sams which is quite delicious but i'm only about a 3rd of the way through and it's 'crystalizing'
It makes it harder to squeeze out of the bottle and I'm not really sure if it changes the 'complexity' of the honey whereas i may be getting more or less sugar/sweetness from a teaspoon full.
Does anyone know a way of preventing the honey from crystalizing and know what exactly is happening to the honey?
thanks!

Use a spoon
Honey is the only food which never spoils. Though it does crystallize, like you said. But it still works exactly the same and there's nothing wrong with it for Tea. So just use a spoon.
BTW-IT takes more than a few months to crystaliize, more like a few years. If you dont use it much, buy smaller jars.

thanks for the info! i'll 'll use the spoon when i need to.
with regard to the quart bottle i have from Sam's, i know i have it less than a year and it's crystalizing. Now it's got me thinking. Being the honey was delicious i figured it was quality honey and now being it's crystalizing too soon I'm thinking it's not good quality.
But isn't honey honey? Do some companies do anything different to the honey after they retrieve it from the hives?

thanks for the tip... not sure if i'd want to micro the whole bottle and whether it would keep it's smooth consistency afterwards for any long period of time

Years ago I read an article on "blue honey".
Adding freshly picked psychedelic mushrooms
into a jar of honey and letting it sit.

Yes, but be careful. If you overheat it, it will burn and/or carmelize. Which makes it hard as a rock. Heat it in the microwave, but do it one minute at a time, and check it. Should be fixed in around 2 or 3 minutes,.

When 'waving, make sure you use 1/2 power.
But, for the record, I am in the smaller container camp.

I likes some honey in my green tea when I drink it. Lately I've been using honey straws which work great.
