also, a crucial part of the cookie baking process that is often ignored is the cool down,

give em about 3-4 minutes once they're out of the oven so that they harden enough to pick up, any more and they'll get too hard and you lose that out-of-the-oven freshness

Anyone who would even consider desecrating something as perfect as a
chocolate chip cookie (or a brownie for that matter) with nuts must
have a grudge against their palate. Shame on you, Bulldogcakes.

And as long as they're chocolatey as hell, I'll eat 'em hot or cold, thick or thin.

This cookie that just won a contest sounds pretty damn tasty. Now I just need to figure out where to buy good dark chocolate out here in the boonies.

Mexican chocolate chip cookies win judges' hearts

Copia's "best darn chocolate chip cookie contest" attracted more than 160 recipes, from as far away as Italy. A recent final tasting produced the first-place winner: the Mexican double- chocolate chocolate chip cookie, created by Chaim Potter of Napa.

"These delicious cookies almost melt in your mouth," the judges said. "The flavour and scent are reminiscent of warm Mexican hot chocolate. And the rich chocolate stays gooey long after they cool -- if they last that long. They seem to disappear as fast as you can pull them out of the oven."

MEXICAN DOUBLE-CHOCOLATE CHOCOLATE CHIP COOKIES

(Makes about 3 dozen)

1 c. (250 ml) all-purpose flour

1/2 c. (125 ml) unsweetened Dutch-process cocoa powder

1 tsp. (5 ml) ground cinnamon

1/2 tsp. (2 ml) baking soda

1/2 tsp. (2 ml) coarse salt

1/8 tsp. (0.5 ml) finely ground black pepper

1/4 LB. (125 ml) coarsely chopped good-quality dark chocolate

1/2 c. (125 ml) unsalted butter

1 1/2 c. (375 ml) sugar

2 large eggs

1 tsp. (5 ml) pure vanilla extract

3/4 c. (180 ml) semisweet chocolate chips

1. Preheat oven to 325 F (160 C).

2. Whisk together the flour, cocoa powder, cinnamon, baking soda, salt and black pepper. Set aside.

3. In a small heatproof bowl set over a small saucepan of simmering water, melt the coarsely chopped chocolate with the butter. Let cool slightly.

4. In the bowl of an electric mixer fitted with a paddle attachment, combine the melted chocolate mixture with the sugar, eggs and vanilla. Mix on medium speed until combined. Reduce speed to low and gradually add the flour mixture. Fold in the chocolate chips.

5. Line a 17- by 12-in. (43- by 30-centimetre) cookie sheet with parchment paper. Using a 1 1/2 -in. (3.8-cm) ice-cream scoop, drop scoops of the cookie dough onto the parchment paper, spacing 2 in. (5 cm) apart. Bake the cookies for about 15 minutes, until they look flat and the surfaces crack (cookies should still be soft in texture). Let the cookies cool on the parchment on wire cooling racks. Store at room temperature for up to 3 days.

I like them only about 3/4 baked. I take them out of the oven when they still look
whitish and uncooked on top. By the time they cool, they are nice and chewy.
YUM. And I only use real butter--no margerine here.

I'm with WP. If it's not real butter, it's worthless.

Also... use a good cookie sheet. If they burn (even slightly) on the bottom, it practically ruins them.

For the most part I like them evenly cooked. There are times when they're fresh baked that if they're slightly burnt around the edges that they're really good warm.

I think the bigger question is, do you like Toll House, Pillsbury, some other brand, or made from scratch?

Make them from scratch, using the Toll House recipe. Perfect cookies.
