Fukui-San! The Iron Chef has added shark farts to the bonito broth!

Hibachi cuisine is cool... Japanese food is less reliant on sauces that Chinese food is... so the lighter fare is nice, but tempura kills you on the fat content.

I think Japanese culture frowns on highly fatty foods like we do, but I'm not sure.
