i eat Eggs with my pork chops.

my grandma always ate her pork chops with applesauce. i havent seen anyone do it since. Stugots grammy had me thinking about mine and this memory popped in my head. she said it was the greatest combo ever when she was alive. Miss my nanny.

I've had it a couple of times. It's OK.
But gimme baked beans, poato salad and coleslaw any day.
Oooh oooh. Sometimes I like red cabbage too.

Yes! absolutely, except I a bit more of an adult twist on my applesauce.
I rub porkchops with a mix of salt, pepper, sage and rosemary and let them sit for a few hours to get the flavors blended. Then grill or roast them to 140 F in the center and remove from heat so they do not over cook (let center temp rise to 160 before serving - remember meat keeps cooking a few minutes after removed from heat).
Then I make the applesauce (or whatever fruit sauce I feel like that day). Chop apples, a bit of ginger, some cinnamon and nutmeg. Mix in 1/2 cup dry white wine, maybe some chopped pears and cranberries too, add enough water to barely cover and simmer until fruit is soft but mixture is still somewhat chunky.
Serve with a light salad of mixed greens with raspberry vinaigrette and a good pinot noir.
Try these other spice rub and fruit combos:
rub pork with: nutmeg, coriander, black pepper, cinnamon and service with fruit sauce made of peaches and cheeries
rub port with: allspice, ginger, orange peel, basil and chile pepper and serve with a mango-apricot-vidalia onion compote

great stuff indeed. i can't remember the last time i had a pork chop, but every time my grandma makes a a pork tenderloin, she always has home made apple sauce to go with it. mmmmm.

I'm not a big fan of pork chops. They're either too fatty or dry as a fart after you cook 'em.
When I do have them, I usually have a heaping side of baked beans with it.

try breading them and baking them. this is great with boneless pork chops. it's the bomb!
and, no applesauce. always sounded vile to me.

it's actually common to pair pork chops with a fruity marinade/glaze because they're so low-fat that it will tend to dry out, like gvac said.

Shut it, Methuselah. I love all of these foods...just seperate. They can get all mashed together when my guts turn them into turds. Doing it ahead of time, well, you might as well eat out of the toilet. I prefer to enjoy some tastes seperately as opposed to cramming it all in at once.

Seriously, try it. Next time you make a turkey sandwich, instead of spreading that heinous mayo on the bread use some raspberry preserves or jam.

love turkey sandwiches with cranberry preserves or even a light cranberry mayo/relish. damn, now i'm starvin'!
edit: from carve on 47th street: Thanksgiving on a Roll rotisserie turkey, foccacia & apple stuffing, carve's special cranberry mayo on ciabattina. i fucking love that sandwich and wish it didn't cost 8 bucks.

My father in law makes a cranberry sauce that is to die for. it doesnt taste good on the turkey on thanksgiving but on left over turkey it kills.

Wow MB, your post made me starin' ! Sounds great. We do kind of a German spin on the ole pork chops and applesauce - instead of applesauce, lay down a layer of Sauer Kraut with brown sugar, cut up raw apples, and caraway seeds. Then put your pork chops or pork loin on top and bake - Ohhh man ! Sier Gute !!! Serve with boiled and buttered potatoes and a good hoppy beer and F4P would be a happy happy fellow !

Thats a very early-American turn of the century combo, putting fruit sauces on meats. I think it even goes back to colonial times. Makes me think of a very traditional Thanksgiving meal.
Other fruits work nicely with pork chops/poultry as well, you can do a blackberry, blueberry, or apricot compote (simply cook on stove w/little sugar) and even throw in a little heavy cream. Serve with some veggies and you'll have a very nice meal.

Ugh! Couldn't stand that bland chunky crap. I refused to eat anything but Johnny Appleseed's Very Fine Applesauce. Triple Filtered to get all that icky pulp out.

i love pulp. more pulp=more gooder.
i love my morning oj so pulpy that you have to chew it.

it was actually good. I ate it on the side, didnt put it on my chops. i think i will definitely eat it again!
