The simplest way to know the correct way is to take off the "Amy and" part of the sentence.

You wouldn't say "Me went to the store." It's "I went to the store."

Therefore, "Amy and I went to the store" is the correct way.

Now if you said "Stugots went to the store with Amy and I" it would be incorrect. Taking off the "Amy and" part would make it "Stugots went to the store with I" which is just crazy talk.
