i live in new york, where can i get good bread? what IS good bread? the only bread i've ever had comes wrapped in plastic from a supermarket. i need to know more about bread. whoever first puts up a picture of the band bread or even james beard, i'll say it now... clever.

If you don't have a good bakery by you, just go to a nice Salumeria. They'll have some nice Semolina bread there.

Get yourself a nice pugliese or levain or some other european-style naturally leavened bread. If it comes in any packaging, it will probably be a paper bag. I recommended "Crust and Crumb" by Peter Reinhart in another thread. If your not interested in baking bread, read some of the intro chapters at the bookstore to learn ye something about bread.

All the supermarkets near me have been getting a lot better with specialty foods in the past few years.

I'm not saying that these bread delivery places and other specialty foods distributors are "Old world quality and taste" or anything, but they're bringing a decent to very good quality food to people who usually would never have even heard of them.

Check for a special rack or bin in your local supermarket's bakery section. I don't know the name of the company but I see a couple consistent names in different stores around here and the bread is very good.

the bread that's baked at the supermarket is pretty good most of the time, compared to wonderbread, in fact it's probably a good place to start.

like wine, cheese, dope, or other things that we have "american" versions of that we're all used to, it would be to big of a shock to go straight to the good shit

This is my all time favorite bread. I was looking for a picture with fresh tomatoes on the top. One of my fav resteraunts in little italy makes the best, softest focaccia bread with olive oil and tomatoes all over it. (the tomatoes must be mushed not sliced)

in NJ we have Calandra Bakery Breads, which they sell locally by me at Kings. it is really good Italian and Semolina bread

Calandra or Calandria's (?) is the best bakery in NJ. They only have 2 locations but they do sell their breads in A&P and other stores. I prefer to go directly to their Newark location. While getting all different breads I also pick up their delicious Italian pastries. mmm

If I dont go to Calandra I have recently started buying fresh Bread (all kinds) from Trader Joes. I dont know who makes their bread but its always fresh daily and they have 10 different varieties and they are really good.

True, food in general has improved so much since I was a kid.

But bread is a special case. You need to have a good local Italian or French bakery in your neighborhood, and you have to go there first thing in the morning. Should be made with yeast and allowed to rise slowly overnight. Good bread doesn't have any shelf life, takes time and effort to make, so many big supermarkets use pre-made mixes that just don't taste the same or have the nice uneven holes or a nice crust on them. Good, fresh bread can be eaten plain, even without butter if its really fresh. There's just no replacing a local bakery that does it the right way, and unfortunately there are less and less of them around, especially in Manhattan. If you are in the city, check out Amy's Bread. One store on Bleeker and another on 9th av in the 50's. Excellent. Sullivan street bakery is good as well.

Good bread is better than sex.

EDIT-You're in New Hyde park? Go over to Franklin Square, there's at least 3 or 4 good Italian bakeries there, all of them good. But skip Sapienza unless you want Pignoli cookies.

That place is god awful and way over priced. Im one who will spend any amount of money on good food. But when the food is shit I would rather starve then pay even a penny. Most A7P, ShopRite's, Wegmans, etc in NJ all sell Italian Bakery breads. They are delivered every other day maybe even everyday. They always have a made date and take off the shelf date. I just bought a Calendra long roll it said made 9/20 and discard (or something like that) 9/22.

If it's really good bread, it's made with wild yeast (It's all around us, and it's free. That capsulated shit in the trifold envelope is ok, but wild yeast is a true bread baker's palette.) Real bakers dont pay for yeast. Also, from start to finish, the starters and the final product will probably go through five days of rising and refreshing before it even sees the oven. This is called pre-fermented bread. Slowest is bestest.
