I am a big fan of the pignoli cookie.

Or that one that looks like a clam is good too.
I also like the anisette toast.

pignoli are amazing, both chocolate & vanilla lace are terrific

but last month, i had tri-color cookies with a pignoli paste (or at the very least in the jelly) -- the greatest cookie ever

Pignoli nuts are fucking disgusting. I've hated them all my life. In Middle Eastern cooking they use them in rice sometimes. Who the fuck puts something hard in rice?!?!?

As far as my favorite Italian cookie, I don't know the names of many but I'd say the "Free" kind. Wacka wacka.

but honestly, I don't think I've ever had a well prepared Italian dish or other food item I didn't like.

these are great with a little powder sugar on them.

I also like 2 other cookies but cant remember their names or how even to describe them. I just called my mother and she knows exactly what Im talking about, she didnt know the names either. Thanks Mom for no help!

I love Pizzelles ever since I was a little kid. My Aunt's family is Italian and her Mom always brought them to family gatherings. After she found out I liked them, she would make a special little bundle for me to take home. :smile:

Love these! Made them for a term project in a baking class...had to tell the story behind them too. While it may be obvious I never realized until I did the project it is supposed represent the Italian flag. Doh!

My sister loves them too. She's a cheap birthday gift, all I need to do is give her a pound of 'em and she is ecstatic.

These are the greatest fucking cookies EVER. Bar none. When I was in high school my girlfriend worked at a bakery and she'd bring me a box at lunchtime and I'd have to fight off the rest of the animals so I could get my fair share.

And when I say fair share I mean about a pound and a half.

Consider this a gift from me to you in exchange for your blog-tastic writings:

Ingredients:
7 ounces almond paste
3/4 cup sugar
1/2 teaspoon almond extract
3/4 cup margarine or butter, room temp
3 eggs
1 cup all-purpose flour, Sifted
1/4 teaspoon salt
15 drops green food coloring
15 drops red food coloring
2/3 cup apricot preserves
3 ounces semisweet chocolate
1 teaspoon vegetable shortening

- Preheat oven to 350 degrees
- grease (with shortening)3 9x9 disposable baking pans, cover bottom with parchment paper and grease again
For the mix
- Into the mixer (or in bowl with beater) put the almond paste, sugar, almond extract and butter and blend well
- add the eggs one at a time until completely blended
- On a low speed the flour and salt were added slowly until combined
Baking
- split into 3 equal portions
- add 15 drops red food coloring and mix 1 portion, add 15 drop green food color and mix another portion. 3rd portion remains uncolored
- put each portion in it's own baking pan, level and bake off for about 10 minutes (or until a toothpick can be inserted and removed clean)
-Cool each section fully.
Assembly
- Lay green layer on green parchment
- spread apricot (or raspberry) jam across top
- drop uncolored layer on top of it
- again spread jam
- top with red layer
- spread melted semi-sweet chocolate on top and allow to harden.
- Let cool in fridge for about 2 hours
- Trim around edges, then cut into those cute and delicious little triangles.
