How do you like your eggs?

I usually only eat scrambled eggs. Or an omlette, but that's pretty much the same idea. 1/2 whole, 1/2 whites only (cue Ms. DiFranco...)

Boil the eggs, cut in half. Scoop out the yolk. Add mayo, a bit of brown mustard, and a can of Deviled Ham.
Refill the whites. Garnish a few with sliced olive or roasted red peppers.

Proceed to overeat.

Here's how I make eggs.

I start with some virgin olive oil and lemon pepper in a pan under medium heat. I toss in some spinach, let that cook for a bit. Then I cut about an inch think piece of cream cheese into little chunks and toss that on top of the spinach. After about 30 seconds, I stir in 2-3 whisked eggs and scramble it all together. Its by far my favorite way to eat eggs (pending pixies version).

If you over-boil the hardboiled eggs, your deviled eggs are doomed because then you can't get the yolks out of the white without breaking them, and then the yolk will be too dry (eww) and dry egg yolks are icky.

About 6 or so years ago, I took it into my head that I was going to make hard-boiled and deviled eggs at Easter. Never mind that I don't eat them, but I made them anyway. (I've hated hard boiled eggs since I was 5 or 6.)

I don't remember if they were good, but making the deviled ones was a lot of fun.:devil2:

Poached....as Eggs Benedict. Not regularly granted, but every once in awhile. Hollandaise is a bitch to make when you're half awake and hungry.

Switch it up sometimes and replace the canadian bacon with a slice of smoked salmon or sauteed spinach. Nice.

It's all about the mustard. Too much, and you might as well dip them in the jar. Not enough, and the eggs wind up tasting gritty and almost powedered.
