I made Chicken Fried Steak last night. I wish I had seen this thread, I would have snapped a picture. It came out great, double batered in buttermilk and flour. I seasoned the steak with salt, pepper and smoked paprika. I made a white gravy with bacon (didn't have any sausage) and mushrooms. The only thing I would change is that I didn't take the time to make biscuits ... I was very sad to look at leftover gravy and not have anything to sop it up with.

I am totally with you when it comes to crappy restaurants using poor cuts of meat that are so thin they get overdone before the coating browns properly. But, when the right peice of steak gets tenderized properly,and fried right, it's a great southern dish.

I'm actually not that big a fan of chicken fried steak either. It can be pretty good though, Waffle House probably isn't the best place to go.

Chicken fried chicken, however, is fucking great. I'd eat it every day if I could get away with it.
