It was brought up during the Best of today, and during a search, I couldn't seem to find it.
Rules: I will allow Bootlegs in this... but they have to be a well-known bootleg.
I'll start with Springsteen and "Piece de Resistance", a bootleg from the Capitol theatre in Passaic from 78.

This is not going to go well.
I'll submit the "It Ain't Over Until the Fat Roadie Plays" by the Replacements. It is a bootleg of the Mats performance at Grant Park in Chicago on July 4, 1991.
It marks the final performance by the Replacements, a performance which ends with each of the members being replaced by their respective roadie to end the show.
Besides the historical significance, it happens to be an excellent show, arguably one of the best concerts they ever delivered.

Alive - Kiss
Live Bootleg - Aerosmith
Live At Leeds - The Who
Live Stones albums generally suck balls. I wonder why they put so many out?

OK someone mentioned Yessongs. That and the Emerson, Lake, and Palmer live album; if you're old like me you remember they used to press dead dinoaur goo into discs and then cut a groove in each side... anyway the Triple Live Album was a monster of a beast; you unfolded panel after panel of Roger Dean art for Yes and who fucking remembers for ELP. Three discs were needed for bands who didnt think twice about a 40 minute long song.
A different age; those things weighed like five pounds each and took up your entire floor when unfolded. You could wallpaper a room with the panels. I did.

I do have all the ELP stuff! The triple live one was called "Welcome back My Friends, To the Show That Never Ends"
I just picked up the remaster and it's probably the best it'll ever sound. The original mix wasn't that great, so they did the best job they could.

Dude you know 9/8?
Sweet! Love that sig; Kansas has a part of a song 'Magnum Opus' that I constantly drum on my steering wheel
I'm a big fan of 5/8 and 7/8 and not just for math rock reasons; 5/8 [5/4?] in songs like
My Wave Soundgarden
adds awesome tension like the 7/8 parts of subdivisions
4/4 is so overdone. Tool has been awesomely fucking with polyrhythms for a while.
OK what the time sig on that watcher of the skies riff; pi/8?

I have to go with Johnny Cash at Folsom Prison. Who else has the guts to do live albums in prison. Plus it is an album that my family (Dad, brother, and sister) just seem have a connection to. It's an album we all like, probably cause of some the stories my dad has told of us of him and my mom meeting Johnny and June, and the concerts they saw Johnny in.

Does it bother their fans that
a) Kiss Alive has extra crowd noise dubbed on it
b) GD's Europe 72 - they overdubbed the vocals
Not a Kiss fan anyway so that doesn't matter but I don't listen to Europe 72 anymore

Damn, I need to get over here more often.
Here's a few off the top of my head.
Dylan:
Royal Albert Hall
Now Ain't The Time For Your Tears boot
1st Leg of Rolling Thunder Boots
Toronto 1981 Boot (yes, it's one of his God shows, but includes a number of unreleased songs that would have greatly improved Saved)
Rolling Stones
Any 1972 bootleg - Mick Taylor was finally fully integrated into the band; these shows were much more powerful than Ya Ya's
Neil Young:
London 1975 bootleg
Who:
Fillmore 1968 bootleg
REM:
Athens 1981 bootleg
Uncle Tupelo:
Final show bootleg (5/1/94?)
Springsteen:
Boston '74 Bootleg
Passaic '78 Bootleg
Winterland '78 Bootleg
Replacements:
CBGB's '84 Bootleg (classic drunken set full of covers and tv theme songs)
7th St. Entry '81 Bootleg
Final Show Bootleg
Wilco:
Lots of shows to choose from throughout their career
Son Volt:
First Avenue 1995 Bootleg (their first or second show)
Steve Earle:
Jersey Bootleg from mid-90's featuring Springsteen on the encore
Jeff Tweedy:
2007 House Show won by auction
Neil Young:
London '75 Bootleg
Jayhawks:
Brookings, South Dakota '94 - recorded by me (I was shocked this ended up being circulated on torrent sites)
San Francisco, early 90's bootleg
Section 8
