Lots of folks on the board have kids, so this is a thread to share your recipes that kids love.

I have a recipie for some really good baked macaroni and cheese...so unhealthy but so good. Once I find it I will post it.

Believe it or not, Broccoli is one of my boys favotites.
Boil the broccoli, chop into smaller pieces.
In a sauce pot, sautee onions and garlic in olive oil.
Add the broccoli, salt and pepper. Let all of the onion and garlic goodness get all over.
Serve.

Since Sean has a swim meet today at 5, I won't have time to make a nice healthy meal, so one of their favorite quickies is the old standby;
Manwich.

The 2 of them can pretty much kill a pound. (especially served on nice fresh potato buns)

Chicken Enchiladas

2 lbs chicken breast, pounded to 1/2 inch
8 large flour tortillas
2 taco seasoning packets
2 10oz cans mild enchilada sauce
1 cup shredded cheddar cheese

Heat oven to 350*F.
Wrap tortillas in foil and place in oven for 5 minutes. Set aside.
Pour 1 can of enchillada sauce into 13x9x2 inch baking dish.
Heat chicken in large pan and shred as it cooks. Add 1 1/3 cups water and seasoning packets to shredded chicken. Simmer until sauce thickens. Distribute chicken to 8 tortillas. Roll and place seam side down in baking dish.
Pour 2nd can of enchilada sauce over tortillas.
Bake 15 minutes.
Remove and sprinkle with 1/2 cup cheese.
Bake another 5 minutes.

Top with sour cream, cheddar cheese, chopped tomato, chopped onion, jalapeno or salsa.

I also use 1 1/2 lbs ground beef and a large can (don't know the size) kidney beans instead of chicken.

Chicken Manicotti

26oz tomato sauce
3/4 cup water
1 tsp garlic salt
1 1/2 lbs chicken tenders
14 uncooked manicotti shells
2 cups shredded mozzarella
chopped basil

Heat oven to 350*F.
Mix sauce and water. Spread 1/3 into 13x9x2 inch baking dish.
Sprinkle garlic salt onto chicken. Insert chicken into uncooked shells.
Place shells on pasta sauce. Pour remaining sauce over shells. Cover completely.
Cover dish with foil.
Bake 1 hour or until shells are tender. Sprinkle with cheese.
Bake 5 minutes or until cheese is melted.
Sprinkle with basil.

i dont have kids and these arent really recipes but...

grilled cheese and tomato soup

and those kits...chef boyarde pizza...old el paso taco

always had fun helping make those when i was little

Our nieces like the Good Eats baked macaroni and cheese (http://www.foodnetwork.com/recipes/alton-brown/baked-macaroni-and-cheese-recipe/index.html).

The one substitution I make for kids is using shallots, which are milder tasting, instead of onion and mild or medium cheddar cheese instead of sharp or extra sharp. (Or a mix of cheese sharpness. But the mild cheese doesn't give the dish enough stand-alone power for adults.)

Yes, it makes a big mess, but it's great fun.

Some of my best memories from when I was really little involve "helping" my mom cook or bake. So, I also recommend anything you can make "together."

Little kids love to do relatively menial tasks, like shredding lettuce or picking over beans, if you show them how to do it. (Once, I got my 5 cousins, who ranged in age at the time from just over 1 to 11, to help me pick over dried black beans so I could prep them for dinner later that evening. They did a really good job and it made them extra excited about the dinner I cooked.)

Depending on how confident you are about your kids' ability to not drive you up the wall, it could be a lot of fun.

1 lb ground sausage (i use jimmy dean breakfast, but i have used italian too)
2 cups grated mild cheddar cheese
3/4 cup bisquick


mix ingredients in a bowl and form 1 inch diameter meatballs

grilling them is best, but cooking them in an electric frying pan works well too
turn frequently and cook till crispy on outside (about 18 mins)

put a tootpick in each one and offer dips of your choice (honey mustard or maple syrup, etc)


yummy for adults too

.. although I imagine thats a way to get fat kids nowadays.

That doesnt make kids fat, its the lack of physical activity as a child plus those. I was a rail as a kid and I loved pigs in a blanket.

I used to use crescent roll dough for that and used to slit the hotdogs and insert sliced American cheese before they went into the oven.

(We got the "recipe" from the Mini Pages section in the Record when I was 10 or so. I am not making that up.)

My husband's sister-in-law does the brie-in-crescent-dough.

I also make pepperoni loaf from my dad's recipe ... it calls for a couple cans of crescent roll dough, mozzarella cheese, provolone cheese and pepperoni ... although, back to the original topic, if your kids like salami I don't see why you couldn't use that instead.

Just letting you all know that Alton Brown from the food network is doing a kids cooking thing during the nyc food and wine festival. The thing is the tickets are 35 bucks and you have to go with a kid.
But I'm sure it would be awesome. The nyc food and wine festival is in October..
I know cause I tried to get tickets to a show Alrton Brown was gonna do in comics as part of it, but it was already sold out. :(
