As a question, how much homeowner's insurance should I get and what should the deductible be?

One person recommended to me "enough to cover the mortgage" for the dwelling itself, and a 1% deductible on coverage.

Should I get more than that?

It all depends on where you live and how much ur house is worth. I live in the midwest and 4 years ago when I purchased my house my homeowners was right under 600 a year now its up to 1000 and I have never filed a claim. They raise ur rates based on things like flooding in ur area or in my case tornado activity. I found its good to have an actual hometown agent instead of using someone like Geico or AIG, then again definately don't use AIG. Have your mortgage co pay ur insurance out of your escrow too. I found its easier that way and I think my insurance co gives a discount for that. Don't skimp on the insurance though cause you never know.
