I saw on TV how these butchers "on wheels" will go straight to a farm with a trailer that contains their shop. They spray down and sanitize the inside of the trailer, kill the cow, bring it inside and go to work.

I've personally shot, slaughtered and quartered 23 Cows. Mostly Mostly Steers, but some where heifers too.
Here's some of the beef hanging right here.

A cow, no.
A suckling pig, yes.
When we were in Argentina, Tio Carlitos went out to the farm at 6 am. Picked the pig, had it taken care of, and it was on the grill in 2 hours.
He also managed to get me some Guinness Draugh at a ridiculous price.
Best farewell BBQ EVER!!
FYI, a 200 pound cow is probably really sickly. Even a veal weighs more than that.

The Tubster is right. Your looking at about 500-700 lbs for a yearling cow. A fella might not want to eat one much before a year old. Maybe 10 months. But no sooner.

Worth the trouble to get there if you think meat is murder but still love a juicy steak.

Yep. My grandma and grandpa rasied cattle when I was a kid. They'd slaughter a couple every year and keep/eat the meet. Yummy.

Buddy of mine raised two cow just for eatin. Best prime rib I ever had. Some people in his family
actually refused to eat it. They claimed it would be like eating a pet because they helped feed them. Fuck that.

I think the majority of the Ron and Fez show and staff weighs more than the cow you want to eat.

Same thing here. We would visit my Grandparents in Missouri every summer and they would usually slaughter one of the cows they raised on the farm shortly before our visit. We would eat fresh meat while we were there and bring some choice cuts back home to Pennsylvania in a big cooler.

I used to work at a butcher shop.
I would have to kill and skin goats and smaller animals, but never the cows.
I did have to move the giant vats of cow guts out to a truck once a week. That's not fun.
It's strange. As horrific as that job was, still not my worst gig.
If you have a meat freezer, buying the whole animal is the way to go.

Most people do not have close to the freezer room for a fully cut up cow. Half a cow will usually fill an 18 sq ft freezer to nearly full. It is much cheaper to buy beef this way than individually from the grocery store.

Like others have said, I just want the dinner on my plate. Even chicken on a bone makes me think of what a caveman I am. I could kill an animal to survive if it came to it.
Even Anthony Bourdain on one episode of No Reservations got melancholy after slaughtering a pig. And this is a guy who handled food his whole life.
