Me and my boss were having an argument.

He doesnt cook chicken much because everytime he cooks it he says its Dry.

And also says the best way to cook it is in the microwave.

But he is talking about cooking it any method.

He says he cooks it for 30-40+ minutes.

So how long do you cook it?

Lets say medium sized chicken breast.

If I cook breasts on the grill, I usually pound them flatter, and it takes 10 minutes top to cook. If I don't pound them, it may take an additional ten minutes.

But cooking a chicken breast for 30 minutes seems nuts.

He cooks the chicken breasts in the microwave? Are you serious? That's why it's always dry!

Gross.

How thick is the cutlet? Is it boneless/skinless? How much does it weigh?

Thinner cuts are going to cook more quickly (maybe 3-4 minutes per side in a pan as compared to 7-10 minutes per side for thin-cut tenders versus a thick-cut breast) and if you overcook any cut it'll be painfully dry and disgusting no matter what cooking method you use.

I agree with the above.

Also if you marinate the chicken, you've got some insurance against it being dry.

Also tell your boss that a microwave doesn't do the best job of killing foodborne bacteria found on chicken.

Tell your boss to order it from the diner like fez does. 30-40 minutes? Does he use an easy bake oven?

Is he cooking it on "low?"

Jesus, a breast on a gas grill shouldn't take longer than 15 minutes, and probably should take less than that.

I dont need a thermometer to tell chicken is done, this chicken he cooks must be the most dead bird around.

Is it bone in or boneless? I usually use thin sliced boneless breast, 5 to 7 minutes per side in a skillet if I bread them. If not I heat a thin layer of extra virgin olive oil in the skillet and fry them up 4 to 5 minutes each side.

One time I took frozen chicken breast out at 3pm and by 8pm it still wasn't thawed. I was pissed and stuck it in the microwave.

It was the worst meal I ever made.

If I have to thaw something, I put it in the fridge before I go to bed the night before I intend on cooking it.

When I was working in restaurants we just put it in a container and then ran cool/cold water over it.

I asked him if he cooked from frozen or not. this was what he said.


"Eeeehhhhh, sometimes. If its frozen its usually an hour[ to cook]."

your boss doesn't know how to cook. i'm willing to bet that he's an all-around idiot. in fact, cooking chicken might be one of his best skills.
you're not going to be able to teach him anything, and he's sure as hell not going to get any tips from a message board.

my advice is to quit now before things get worse.

I'll use the cold water trick if it's still frozen when I go to cook it so I don't have any issues.

Did you explain to him that cooking something that hasn't been thawed means that the outside will be overcooked LONG before the inside gets warm? Doesn't he watch Alton Brown????
