Despite this story being horribly old and not news worthy I did find this bit of logic difficult to follow: Some members of minority groups
are to one degree or another lactose intolerant — most mildly so. Therefore
choosing milk as a state beverage is racist or as Pacheco put it, “a
white choice in more ways than one.”

I assume that it's alluding to the instances of lactose intolerance in people of Asian and African descent being higher than those in the Caucasian/White population:
# 90% of Asian American adults have lactose intolerance (NIDDK 1994)
# 70% of African-American adults have lactose intolerance (NIDDK 1994)
# 74% of Native American adults have lactose intolerance (NIDDK 1994)
# 53% of Mexican-American adults have lactose intolerance (NIDDK 1994)
# 15% Caucasian adults have lactose intolerance (NIDDK 1994)

Yes, but the problem with those statistics would be that the majority of those that are lactose intolerant have a minor form that is usually asymptomatic. If I remember correctly we have an enzyme in our small intestine that breaks lactose down to glucose an galactose (sp?). Galactose (still to lazy to grab one of my books) is a protein which some people have a difficult time processing causing the disturbing effects of lactose intolerance.

I'm not arguing with you, there.
Statistics can be used to say pretty much whatever you want them to say. PETA is obviously using the stats I Googled to "say" that a state declaring milk to be its "official state beverage" is racist due to the higher numbers of non-Caucasian adults who are statistically lactose-intolerant.
