If it's a good cut of beef...I leave it alone.
But for a skirt, chuck or flank steak I use:
1/4 cup soy
2tbs lime (or lemon) juice
1/4 cup olive oil
a teaspoon dried cumin
2-3 cloves of crushed garlic
1/2 teaspoon hot sauce
1/2 tablespoon of freshly ground black pepper
Whisk the shit out of the mix in a bowl, and pour it over your substandard beef keep it in a ziplock bag overnight. (put it together before bed & flip the bag in the morning)
Thank me later.
It's pretty simple and salty
1 part Worcestershire
1 part teriaki
1 park soy sauce
and throw in a little Sam's boston lager

What he said I would like if I made beef tacos or fajitas but if it's a good steak put salt and pepper and cook to perfection, don't sabotage good beef when it's a good cut.
2/3 Cup 80 Proof Amber Rum
2/3 Cup Soy Sauce
1 Clove Garlic, minced
1 Small Shallot, minced
1 Tsp. Dried Hot Red Pepper
2 Tbsp. Vegetable Oil
