Duck hunting is fine. You shoot it and kill it. Having a tube shoved down a poor goose's throat and force feeding it to enlarge it's liver is just sick.

The same goes for hanger steak. It used to be known as the "butcher's tenderloin", a vestigial piece of meat with a nerve running through it. The cut without the nerve looks like 2 turds. It only took some douche to put it on their menu or showed it "parmesan crusted" on the food network, and it tripled in price.

There are a lot of terrible things done to other animals that you probably eat that are MUCH worse than being forced to eat. I would say the cows and chickens who are locked in a box or cage and shot up with all shorts of shit just to keep them alive and producing milk and eggs have it much worse.

Skirt steak makes the best fajitas hands down. All I have to do is head up the street in old Pasadena to a Mexican meat market and I can buy 3 pounds of marinated skirt steak for $10. Grill over charcoal or wood and you have the best fucking fajitas money can buy.

If you ever see video of the old French guys that do it, it's hilarious. They say the birds really love it, and then jam a tube down their throat.

It's not as rich as the other stuff those, it's texture is quite grainy.

I don't have a problem with eating Foie gras and paying out the noes to do so because I go to a guy that respects his ducks and cooks the entire bird after it has been slaughtered for the foie gras. You don't have to be an asshole to enjoy something it just depends were you go to get it.

Any foodie (I hate this term) knows Martin Picard he owns a great French Canadian place in Montreal named Au Pied de Cochon, it has been featured on No Reservations and food network shows. He is a guy that uses the whole bird and is very involved with how his ducks are treated. To the point of going to the farm and checking on them to see if they are being treated with respect.

I have eaten my fair share of Foie Gras, but have moved away from ordering it because it's very fatty and I am trying to lose weight.

The goal of every meat industry, be it beef, pork, or poultry, is the get the most money from every part of the animal. Thereby increasing the value of the whole. They all have many people trying to do this either through recipe development or marketing.

'Ox tail stew' sounds exotic, cow tail not so much.

I know it's niche, but followers of the Weston Price Diet have made all the organs of the cow a hot item when we're at the farmers markets. We can't keep liver in stock any more and have raised the price 3 times in the past 2 years.

2 years ago we wouldn't even package the Pancreas and the Kidney, and only occasionally the heart ... now we sell them for more than some of our steak cuts per pound.

Mother fuckers found out that up poor people like to marinate our flank for a day and it becomes amazing. I hate them.

Goes about 7.29/lb here now. Maybe 7 years ago - it ran at 2.99/lb.

I think the food network did a lot to make polenta fancy. I never knew it as polenta until I was like 20 or 21 before then I called it mush or if you wait until it's solid you can slice it and fry it and put butter and syrup on it. OMG that is the best.

I got Fried Mush for my birthday breakfast for a very long time.
