i had the most delicious
noodles with a peanut sauce
at a local gourmet deli
it is obviously made with peanut butter
but what else?

it was spicy, but not too hot
a little sweetness but not too much

how do i make this?
what brand of peanut butter
is best?

i asked the asian proprietor
for the recipe
but he pretended
he spoke no english

They just had the recipe for it on Paula's Home Cooking yesterday. I've never made it myself, but it looked really good. This is from her website.:

Peanut Sauce:
1 cup smooth peanut butter
1/4 cup low-sodium soy sauce
2 teaspoons red chili paste, such as sambal
2 tablespoons dark brown sugar
2 limes, juiced
1/2 cup hot water
1/4 cup chopped peanuts, for garnish
Combine the peanut butter, soy sauce, red chili paste, brown sugar, and lime juice in a food processor or blender. Puree to combine. While the motor is running, drizzle in the hot water to thin out the sauce, you may not need all of it. Pour the sauce into a nice serving bowl and garnish with the chopped peanuts.

I would add a little Cayanne for an extra kick.

1/2 cup coconut milk
3 tablespoons water
3 tablespoons fresh lime juice
3 tablespoons soy sauce
1 tablespoon fish sauce
1 tablespoon hot sauce
1 tablespoon minced fresh ginger root
3 cloves garlic, minced
1/4 cup chopped fresh cilantro

I use to watch the tv cooking show Yan Can Cook.
He uses this often from what I remember along with other easy to make recipes.
I had used this on chicken. Peanut butter itself can be put under the chicken skin when roasting.
One year I even made it with turkey
Good stuff. Not to hard to make.

The Paula Dean recipe sounds
quick and easy
but the above looks like it has
more flavor (garlic/ginger/cilantro/etc)
so I will probably try that first

do you saute' any of these
ingredients first
or just put them all
in a blender?

also, I love smuckers
peanut butter
is it too gritty, though
for a sauce?

should I use skippy instead?
