If the steak of chop has a bone, I remove that first. I will then cut a strip of meat an inch wide the length of said meat. I then proceed to cut bites off of the strip.

I do two things depending on where I'm cutting....I'll take small pieces one at a time...and sometimes i'll take a bit longer of a slice and cut 2 or 3 pieces from it.
