If you want to hold up 3 fingers, to order at a bar, for calling strikes or even just finger counting
do you hold up your pointer, middle and ring fingers?
or do you hold up your middle, ring and pinky fingers?

To me, its pointer, middle and ring finger. The boyscout salute.
But many schools taught kids like my dopey nephew to start counting number one on their thumb, number two on their index and three on the middle finger and so on. So, there are some people i have seen hold up their thumb, index and middle finger when they are displaying "three" digitally.

Why the hell did they meet in that basement anyway? That was the only big stretch of the whole movie.

Yep. Italy too. Thumb, pointer, middle and so on. Makes no fucking sense to me. Try holding up four (every finger but the pinky) - it's damn near impossible.
