I hope that's not excessive, because I have had times when I take immodium for days on end, several times a day. It has been a lot better since I started taking the Q12 or whatever it's called.

it's a good question.
ass-related cancer is definitely genetic; many feel it is affected by diet as well. Studies have showed that the nitrosamines in charred foods are carcinogenic. Also increasing the "transit time" (time it takes food to go from being food to shit) by slowing down the bowel with either bad diet or medications may increase cancer risk by increasing the body's exposure to carcinogenic toxins.
In the long run, though, you should be able to eat the stuff you mention without getting diarrhea; you may simply have irritable bowel syndrome.
If you eat plenty of fiber (come on, who does, really?), you can get away without supplementing your diet with fiber in the form of MethylCellulose, or Citrucel. It's billed as a "laxative" but in reality it's a bowel normalizer. It's just that most people are full of concrete and so "normalizing" their bowel means loosening it.
The next thing you can try to decrease diarrhea is add a probiotic supplement (http://astore.amazon.com/docsteheafort-20/detail/B000W4PNDS) to your diet. These beneficial bacteria will also help "normalize" a spastic bowel.
If you have a lot of gas and bloating, consider an enzyme supplement, like Lactaid (if you think you might be lactose intolerant) or Beano (for everything else).
If the diarrhea is new and is a change from your previous stool habits, you need to see a doctor just to make sure you're not missing something. Obviously blood, chronic diarrhea, weight loss, fevers, etc., are all reasons to see a health care provider.
let me know if this helps

oh, wait, I just reread your post. Once every week or two? That doesn't seem to be much of a problem, to be honest. Again, if it's a change in bowel habits, worth getting checked.
