Boiling water can only be 212 degrees and gives up its heat slowly. Steam can be superheated to an arbitrarily high temperature and gives up its heat rapidly.

I dont know about that. When you cook a lobster, its done faster if you steam it then it is if you boil it. If you are being tortured, boiling water might be less hot but that means it will take longer

exactly. Steam gives up its heat faster than liquid water does. there's a term in chemistry for that ("specific heat" comes to mind) but I can't remember it exactly.
