I use Iomega external hard drives to store my media files. After using up a 500 gig one, and I decided to get another one. Same make and model. But when I hook it up to my laptop (using different USB ports for each hard drive), the laptop recognizes them both as a G: drive. So if both are on, only one is accessible.

Anyone know of a way to re-label one of those drives as a different letter?

You didn't mention which OS you're using.....if windows then:

Open "computer management":
-click Start, and then click Control Panel. Double-click Administrative Tools, and then double-click Computer Management.
-click Disk Management
-select the drive you want to change
-right mouse click then select "change partition letter"

Only Windows uses letters. No other OSes.

Will each drive forever be labeled as he labeled it tonight or will it change back after the drives are unplugged? If it is forever, where is that drive label info stored? On the drive itself or in windows?

DOS does

The external drives will default back to whatever the next available drive letter if they're removed

Would it be so hard for Windows to recognize a particular drive and always assign a specific letter to it?

I think the problem is that windows looks at the volume label (which are fairly common across all sorts of different removable media) when attempting to reassign the same drive letter.

Surely each removable storage device (USB stick, HDD, etc.) has some kind of unique signature that windows could remember in order to make sure that particular device gets the same letter every time.

Don't think so....its not like an ethernet adapter that has a unique MAC address.

In some ways it would be nice if it would since it is a pain in the ass when windows does "forget" what a previous drive assignment was. On the flipside there's the issue of having a lot of removable drives (for me its flash cards from cameras) where I don't care what drive letter gets assigned.

So far it appears those drives are staying put. I haven't unplugged them from the computer, but I have been turing them off at night.
