Does anyone know what causes them? Or why they hurt so much?

Ice Cream girl causes them... cause there is nothing to smooth the up and down motion.

Brain freeze is the best thing about eating ice cream! And to cure the ensuing headache, I reccommend healthy doses of hot fudge.

A couple of us from work did a search for the answer a while back, on the internet. I believe it was due to blood vessels expanding in the back of the throat, due to the cold...
That shit hurts!!! period

An ice cream headache is caused when the nerves on the roof of your mouth overreact to the cold temperature of food or drink.
The body litteraly tries to heat the brain by the rapid swelling of blood vessels. Fortunately, the body quickly registers that the cold sensation was temporary and as the blood vessles shrink to normal size the headache subsides.
Interestingly, only 30% of people get ice cream headaches!
For the rest of us, to avoid an ice cream headache keep cold food or drinks on the side of your mouth. The nerve cluster that triggers the response is found only on the roof of the mouth.

I hope you're talking about 'brain freeze'....
The only thing I know about that is when the cold hits your throat your vessels constrict cutting off oxygen to your brain for like a second.
