I actually used canned Margaret Holmes collards, I can't make them any better than those. I made the pintos from dried beans, soaked them all night last night, just like my grandmother, and my mother always did, being hillbilly folk, they called them "soup beans", so do I when I'm not posting to a bunch of Godless yankees :wink:

those same godless folks that would have a hard time relating to a home where fat back and bacon grease were always in the refrigerator for preparing delicious dishes, such as as collards...I never knew collards couldn't taste delicious until I ate them at a restaurant

on a totally different note (except for the great food part)...my daughter just taught me a great Zuppa Toscana recipe (I thought about it because we use collards instead of kale)

I'm expanding my southern/country/seafood menu...an advantage of having a daughter marry into a family with some great Italian cooks (we'll see who has the most influence over time)
