Chinese Vegetables

So I'm sitting here chowing on some tofu and mixed vegetables and I cant seem to figure out what some of these veggies are.
There is a flat square thing that I think is brown and kind of looks like it has veins in it, and also a long thing with jagged edges that's kind of clear and crunchy. I am familiar with the baby corns, snow peas, water chestnuts and shrooms but what are these other foreign objects?

And how come the carrots always have rigged edges?

Chinese veggies rock in a stri fry. Don't know what those supposed vegtables are, but tasty aint they.

Could the long brown thing
(that sounds bad) be a
bamboo shoot slice that
soaked up some sauce?
They are rectangular and
thin and have veins... and
maybe could the jagged
edged cruncy thing be a
slice from the vein of a
piece of bok choy? Bok
Choy is quite crunchy.
