Egg Foo Young is by far my favorite Chinese delicacy. For some reason or another I can never find it at any Buffet I have ever been at in my entire life.
Keeping it warm doesn't seem to be an issue because you have those breakfast buffets that keep the scrambled eggs warm. The gravy I wouldn't think would be an issue either. The ingredients don't seem too expensive as it is just the eggs, onions, green onions, meat (chicken, pork, beef or shrimp) and various other sprouts and other vegetables thrown in.
Every other Chinese dish I see on the buffet I see except for this. Whats the deal?
