Very restrained hoppiness, which is nice for Sierra Nevada and appropriate for a wheat ale. Nice clove and citrus notes, and pretty strong for a Hefe. Surprisingly impressed, as I've started to find SN ales a little heavy-handed and clunky.

Almost 2 years of shame-aging has not alleviated the plastic ester flavor from a really hot, uncontrolled ferment. It's still drinkable, because getting intoxicated from something that you created is on par with giving birth (I assume).

You should. Expect mediocre results, but it is still a lot of fun. It is one of those hobbies that can accommodate participation at all levels of skill and financial investment. One thing is almost a 100% guarantee no matter how badly you screw up: you will end up with something alcoholic. It really is amazing the first time you alter your mind with something that you created. I'm sure homegrowers and bathtub speed enthusiasts can relate.

The Beechwood aging part of their process is exclusively theirs I believe. It's actually a pretty interesting tour of their production facility in Saint Louis.

Budweiser actually uses pretty good ingredients. But it's like giving ground kobe beef to McDonalds.

And the beechwood aging thing is kind of a gimmick. Kind of. They don't use beechwood to impart any flavor to the beer. They take beechwood chips and sterilize them to remove any off flavors that the wood might impart. Then these chips are added to the fermenter, where they settle to the bottom. This creates a kind of "scaffolding" for the yeast to settle on, which allows more liquid contact with individual yeast cells, as opposed to a normal fermenter where the yeast settles into what is called a "cake" at the bottom, with the beer "wort" contacting essentially just the surface of the yeast cake. It's actually a pretty cool method for speeding up fermenting for cheap, but probably does little to the flavor of the beer. A more common means to achieve this is for a brewery to use a very large, shallow fermenter, which results in a yeast cake with a much larger surface area.

I'll take that as sort of an insult that you didn't intend to deliver. :tongue: I've landed on the Bud as a regular only because other, more potent (tasting) beers make me really gassy the following day in no small way which can be bad in an 11 am meeting. Even one or two can really get the juices cooking for me.

Funny how Inbev (http://www.ab-inbev.com/) can just jump in and buy something like Budweiser. I wonder how it's accepted overseas and if the change the recipe like they would a Big Mac in Japan or Germany or Russia or wherever they sell.

Thanks also for the bits about beechwood aging. Who knew that's where the yeast live? It's just sort of bread after all.

I usually have to go to the fancy booze store to get this, but I found it at a gas station yesterday. This may be the Coors Light of Belgium, but it's one of my favorites. A perfect example of Belgian yeast character and this beer has also pulled off the magic of crafting an ale that tastes sweet, but has been masterfully fermented out nicely. It's difficult to ferment out all the sugars, yet preserve the sweet flavors, and it makes for a nice refreshing drink.
