For the most part, I agree with you. If I go to a restaurant serving steak with peppercorn sauce, etc., I generally don't get it because the steak won't be great (although I'd get the steak with tequila sauce at Rosa Mexicano).
However, good steak can be marinated. It's different from a condiment, I think and works.
I also prefer Brown mustard over yellow
