Why have we never heard of these things? I watch alot of cooking shows. I eat alot of food. I've never heard of a turkey eggs. Where are these things? Can you eat them? Why no turkey eggs in the supermarket?

Barnyard economics, babe. Turkeys don't lay that many eggs, and the ones they do lay are used to produce more turkeys. The average egg-laying chicken lays 300 or so eggs per year, while the average turkey produces only 100 to 120. Chickens come into production at 19 to 20 weeks of age, but turkeys don't get cranking until 32 weeks. Turkeys are also much larger, averaging 16 to 17 pounds compared to 3.5 pounds for chickens. So you'd need a lot more room for a bird that would take a lot longer to produce a lot fewer eggs.
Another problem is that turkeys go "broody" easily--they want to sit on their eggs and incubate them. In contrast, egg-producing white leghorn chickens have had the broodiness bred out of them. They lay and lay and have no desire to incubate their offspring or otherwise be maternal. You want to play in traffic? Fine! Whatever! Now let me go lay some more eggs. Proof that just because you can make a good breakfast doesn't mean you're a good mom.

Like all birds, turkeys lay eggs. I've had them in omlets, scrambled and poached. Not as good in my opinion. Also, they are quite expensive. See this article.

I read a lot of blogs, cooking and otherwise, and I see turkey eggs come up from time to time. A lot of people eat them, they are just like any other egg but bigger. I have never seen them in a local market, but I know places like Whole Foods and Fairway carry them. Goose eggs also.

Ostrich eggs always look gross on Iron Chef. I like eggs, but that's just too much egginess for me.

I want to see Mario Batali break open a turkey egg one of these days.

There is a guy around here that has emu's and while I have seen the emu eggs I have not tried one. He eats some of them.

$30 for a egg? No thanks. I'll stick with a buck 85 for a dozen chicken eggs.
They cook up pretty good.
Fried.
Scrambled.
Poached.

I have eaten many eggs from different fowl and my favorite is the goose egg. Two of those make the perfect sized omelet. They all taste very similar, but farm raised, no hormones taste slightly richer and I prefer them this way.

I'd have a hard time eating an egg with a green shell. I don't even like colored easter eggs.

From my limited research this is correct. Dont get old eggs though as the yolk might be a bit crocy for lack of a better term. Im trying to be a good mimi mod taking care of my forum so any other food questions pm or post and I will look into it.

They are not bad but the yolk needs to be separated in my opinion because it just did not taste right. The white part tasted similar to a fowl egg. And the shell is more fragile and care must be taken when cracking them. I have never had a turtle egg though.
