A place figures out its food cost to include stuff like staffing, facilities etc but if all those suddenly jumped 25% you'd notice, and there isn't a lot of wiggle room- you can always tell when a place is overpriced. I'm sure there was more to the story, I'll bet because cost of living is so high in SF the servers want manditory gratuity because there income is relatively unstable, and other people paying such high prices for everything else might be inclined to skimp on the tips, meanwhile the restaurant gets away with paying them dogshit wages. The bottom line is it's servers askign for it, so it's not a request that carries a lot of weight.

But yes, the phrase 'manditory gratuity' is a complete oxymoron. Ofcourse I took flack for this around Christmas when they had the 'tipping expert' on telling you what you need to tip everyone, and I was saying what a bullshit artist the guy was.

What happened when you tipped for great service? I will tip even if it sucked but by god ain't nobody gonna tell me I gotta tip if the service sucks. Our country sucks anymore.
