I use some canned stuff, but not often. A dutch oven (has to be seasoned right) or large pot that is not a non-stick, 10" skillet, and/or something to roast the tomatos, etc.

Chili should not take long, a hour to 1.5 hours at the most. Many of the spices you put in chili are only oil soluble so you need a little grease (from the meat) to bring out the spices. Habineros are not bad to use, just be careful of their bitterness.

Get a dutch oven. I have a le cruset, but a cast iron one from Lodge is awesome. Or a good, heavy enameled one regardless of brand. They are very versatile. You can use it on your stovetop as long as you do not have a ceramic range top, or in the oven. There is even a great recipe for no-knead bread from the NY Times that bakes the bread in a dutch oven. I have a 5 qt, but I want to get a larger one.
